Lethbridge was originally planted to vine by Swiss immigrants circa 1874. Replanted and redeveloped in 1996, the site is managed to the biodynamic principles of Biological Farmers Australia. Real wine is the passion, wines which are the product of healthy vines and traditional vinification. A mixture of clones, including MV6 and 114, 115 and 777 are grown to a number of unique terroirs on the Lethbridge property. All blocks are picked and handled separately in order to construct a Pinot Noir with penetrative palate and engaging complexity.

Perched atop the spectacular boulder strewn hills of the Great Dividing Range, the Granite Hills property lies to the northern extremity of the Macedon Ranges, along a route taken by Burke and Wills on their fateful journey. At 550 metres, it is one of the highest elevation vineyards in Australia. Established in 1970, a small block of Merlot thrives under the cool ripening climes. A backbone of limited yield, estate growm Merlot is vinified alongside choice parcels, hand selected from good vineyards at Heathcote.

Galli Estate produce a variety of quality wines from fruit grown on their vineyards at Sunbury and Heathcote. Galli Estate have been very well received by reviewers, and have been recognised for quality at competitions, already receiving Gold for their Pinot Grigio, a varietal that the winemaking team find very exciting. A milky white wine showing grapefruit, lime and green apple flavours with hints of musk and lemon. Sylish and modern for everyday enjoyment, Galli Estate is long and clean with titillating fruit and a refreshing finish.

It is the choice of vine trellising techniques which contributes to the quality of Pinot Noir grapes and sets Curly Flat apart. The property is located on a slope which catches the very last rays of sun in the Macedon Ranges at the magical moments before dusk. The vines here yield a national flagship that beat Domaine de la Romanee Conti at a Winewise taste off and was listed by Wine Ark as the second most collectible Pinot Noir in Australia. A complex, aromatic wine offering layers of fruit and bright, seamless tannins, speaking articulately of Pinot Noir and of place.

This is the way it's done on Les grands vignobles de France, whole bunches, extravagant new oak ferments and an extended term of age. Quality of fruit however remains cardinal, terroir and the surrounding elements play the main role, a fortuitous confluence of the Macedon Ranges auspicious soils and propitious climes. Elegant, powerful, a golden delicious Burgundesque style, with the structure to expand and evolve, its vivid muscularity defines Curly Flat as the Chardonnay to match veal escalopes or succulent crackling pork.

Saline winds, maritime climes and sea shell soils, all conspire to achieve the ultimate Rhône styled Syrah. Bellarine Peninsula was identified by Swiss pioneers as a place of auspicious viticulture in the mid nineteenth century, Scotchmans Hill have established superb vineyards over the very terroirs of the colonial winegrowers. Lithe with pepper, elegant fruit and graceful tannins, this is the flagship Shiraz of the Scotchman, sourced from an elite block of Bellarine vine and fashioned for long lived excellence, ideally alongside a fond of delicately braised veal, truffles and morel.

Scotchmans Hill enjoy a long established repute for the most satisfying Victorian Sauvignon Blanc, their expertise with the varietal has delivered an unbroken run of salubrious editions which have become a staple of the Australian wine list. Sauvignon Blanc was a natural choice for the Bellarine Peninsula, the team have since developed an intimate knowledge of the soils and microclimates most suitable for producing the very best. Cornelius is the estate flagship, the defining style in maritime influenced, cool climate Victorian Sauvignon Blanc.

Single vineyard Pinot Noir, the Grand Cru du Bellarine. Hand picked bunches of fruit are de stemmed to small open fermenters for several days of cold soak and wild indigenous yeast vinification, hand plunged daily and pressed to oak barrel at complete dryness, followed by a course of malolactic and fifteen months maturation. The top cut of fruit from the Scotchman's Hill tally of superior vine, redolent of dark berries, forest floor and spiced cedar oak, Pinot of power, concentrated, structured and defined, a weighty palate of persistence, polish and aplomb.

Scotchmans Hill reserve the pick of their parcels for Cornelius, a flagship range representing the most elite blocks within the expansive catalog of estate vineyards. There's a single site of Pinot Gris that outperforms with each vintage. Picked off rows of closely husbanded vines, artisanally handled throughout the vinification, barrel fermented and treated to battonage on sedimentery lees for opulence. Bursting with nutty creamyness, bakers spice, applejack and the opulence of timely oak, a mouthfilling style of Pinot Gris, worthy of the finest gourmandise.

Stimulated by the refreshing maritime winds of Port Phillip Bay, the propitious vines at Cornelius Vineyard yield a precious harvest of the most splendid Chardonnay with every vintage. Crushed into a costly selection of the finest French oak for a luxurious course of barrel ferments, Victoria's answer to Chablis, a big boned Chardonnay style of macadamia, match stick and mineral. Solidly structured and intense, a seamless integration of white peach, calvados and custard cream, fruit, acid and oak in magnificent balance, a long and lingering palate of multi dimensional richness.

Romsey Brut is a blend of very slow ripening Chardonnay and Pinot Noir with often a substantial proportion of reserve wine to ensure that the authentic House Style of Cope-Williams is maintained year after year. Winemaker Gordon Cope-Williams is indeed from the Old Country and his passions for bubbly and cricket have manifested themselves in a cricket pavilion on top of a sparkling wine maturation cellar, next to a cricket pitch. Established in the seventies, the Cope-Williams winery releases discreet quantities from within a very limited range.

A flagship Pinot Noir from a heritage Sunbury vineyard established during colonial times. The fortuitous confluence of elevated aspects and favourable terroirs, rejuvenating maritime climes and limited yields of hand picked grapes, translate into a profoundly structured Pinot wine of layered intensity and stately cool climate elegance. A small amount of this splendid effort is currently on offer, bottled in cleanskin and sealed under good old fashioned cork, for a third the price of its otherwise labelled siblings. Indulge.

One of Australia's salient, small batch winemakers, Gary Farr has always aspired to formulate the ultimate Pinot wine. He may be very close. Gary Farr's style is traditional and essentially Burgundian, employing natural yeasts and whole bunch ferments, he insists on cork. A wine of exceptional balance and finesse, seamless from fragrance to finish, Farr was inspired after reading the Da Vinci Code, to annoint this superlative cuvee Sangreal. As the estate vineyards continue to mature, the holy grail of Gary Farr Pinot Noir comes within closer reach.

For many years, Gary Farr followed up every vintage at Bannockburn with a tour of duty at Burgundy's Domaine Dujac. He believed Australian technology to be superior but was greatly inspired by the traditional practices of French vignerons. Farr brought home the ancient technique of pigeage, throwing whole bunches into large, open vats and immersing his body into the wine to break up any hot spots. A weighty Pinot wine, Farrside combines density and precision with a capacity to endure and evolve.

An extremely limited release every year, crafted from grapes picked off the same property which makes the illustrious Sangreal Pinot Noir, a highly mineral site for the growing of Chardonnay in the style of Chablis. By Farr is a profound expression of uniqueness in terroir. A Victorian flagship Chardonnay, exhibiting exquisite balance between fruit freshness and power, texture and minerality. A regimen of lees stirring and full malolactic, further contribute to the understated richness of an immensely engaging white wine.

Two thirds Chardonnay and a third of Pinot Gris from good vineyards at Bendigo, Mt Macedon and Yarra Valley. Parcels are all whole bunch pressed into a mix of fermenters and pre loved oak hogsheads for indigenous yeast vinification. An emulation of the suave, effervescent Pinot styles from Asti and the Veneto, redolent of freshly picked orchard fruit over supple hints of seasoned butterscotch oak. Fashioned for indulgence alongside all urbane fare, its bold flavours and dry, savoury finish demands one more sip, and then another, a deliciously, moreish wine.

It is the Bress way, that superior quality grapes should be treated gently and with minimal intervention, to be vinified in nothing but the finest new French oak. Low cropped viticulture is in large part, the raison d'être for such reverence, the wines of Bress are religiously handled in such a manner. The bucolic affability of Yarra Valley fruit, seamlessly coalesces with the more elegant and fragrant Macedon Pinot Noir, achieving a measured yet engaging and complex wine. An assemblage of clones MV6 Pinot Noir from the Mount Gisborne vineyard at Macedon, alongside Pinot clone D5V12 from Chanter’s Ridge at Woodend. A mix of whole bunches and gently destemmed fruit are treated to a traditional, wild indegenous yeast open top ferment, hand plunged thrice daily, befor pressing to French oak hogsheads for completion of malolactic and fourteen months maturation. An expansive Pinot style which continues to unravel as it evolves, caraway and sensen, spiced cherries and char, a floor of forest buds, enoke and fragrant sasafras oak.

Vinified from choice Pinot Noir grown to the Original 1988 Vineyard alongside a component from Bindi's newer Block K. Barely 500 to 700 dozen are made each year, a deliciously perfumed, spicy, harmonious and textured forward drinking wine that's true to the style of the estate flagships without being overly complex or intense. Highly pleasurable upon release, a well balanced, firm and long wine offering delicious combinations of flavour, silky textures and fine structure.

Sourced from vines planted in 1988 to quartz alluvial and volcanic soils on the lower slopes of Bindi. A beautifully fine and flavoursome wine, Composition can characterized by its fragrant notes of orange blossom, nectarine stone, spice and subtle nuttiness over a vibrant, tight and lengthy palate highlighted by clean acidity, wonderful texture and superb length. The site is special, increasingly low impact, organic outcomes are implemented, production varies from 300 to 600 dozen each vintage.

French influences abound at Bannockburn, where Sauvignon Blanc draws inspiration from the Sancerre districts of Vallée de la Loire, the emphasis being on elegance and depth of flavour. The maritime influenced climes surrounding Bannockburn's vineyards make for cool and stable ripening, combined with unique soils, providing sensational conditions for growing excellent Sauvignon Blanc. A combination of vinification techniques are employed to construct a singularly engaging wine, it's definitely not another boring, grassy, single dimension style.
